Marco Margoni Dalle Ore’s great-grandfather Girolamo Dalle Ore bought the farm in 1903, led by the love for his land and his great passion for the vine. Dalle Ore is maintained in its original habitat, surrounded by woods and meadows. The south, south-east slope, the geological structure of the volcanic-clay soil, the ever-present breeze on a hilly area, the ancient inexhaustible energy of the volcano, are the natural factors that combine to create the particularity of the microclimate; the same natural factors that contribute to the originality of a high-class cru. 

With great enthusiasm and infinite love for the land, Dalle Ore works according to the principles of biodynamic agriculture, in full respect of the vineyard and the surrounding environment, to produce authentic wines. The farm adheres to a strict protocol called Rule of Valle d’Agno, where the ancient local farming principles have been recovered. The grapes are grown wisely, patiently harvested and vinified with passion. 20% of their land will always be reserved for woodland and meadow. Dalle Ore also utilizes “Quantum Agriculture” which is a four-fold farming system that utilizes frequency broadcasters and was first developed by Hugh Lovel in 1986 as a research project for Union Agricultural Institute in Blairsville, Georgia. 

The winemaking follows the minimum possible intervention. From the fruit to the bottle, the expression is typical of the terroir, which retains the richness that the soil of the vineyard has brought to the fruit. Red wines are fermented in large 40hl & 80hl Slovenian oak vats, whites are fermented in stainless steel, always with indigenous yeast. 

We met Marco several years ago at the VinNatur show outside of Verona and have been fascinated by Dalle Ore’s philosophy and awareness of the spiritual and astral aspects of viticulture and life. The “higher frequency” of being. This combined with the biodynamic aspect of the farm is where we all are one, plants, animals, insects… one and all.

  • Soil: Volcanic, clay, excellent soil texture, high mineral content 
  • Geological area: Trissino, hilly, 300 meters elevation, south-eastern/south-western exposure 
  • Vinification: Maceration on the skins, fermentation without adding yeasts in 40 hl oak vat with controlled temperature, ageing in 30hl barrels 
  • Total sulphur dioxide: < 50 mg/l
     

 

Dalle Ore Cabernet Sauvignon 

  • Vineyard area: 4.5ha 
  • Grape variety: 100% Cabernet Sauvignon 
  • Average Vine Age: 25+ years 
  • Soil: Volcanic, clay, excellent soil texture, high mineral content 
  • Geological area: Trissino, hilly, 300 meters a.s.l., south-eastern/south-western exposure 
  • Vinification: Maceration on the skins, fermentation without adding yeasts. 
  • Total Sulphur dioxide: < 50 mg /lt
